Vegetable Pakora with Feta Dip


LISA’S Feta & Basil Dip provides a cooling compliment to these spicy little fritters.


Chop vegetables into 1 cm pieces. Combine chickpea flour with baking soda, coriander and remaining dry ingredients. Stir in cold water and mix to make a smooth batter. Stir in chopped vegetables. Heat enough oil in a deep saucepan for deep-frying, and drop small spoonfuls of the mixture into the hot oil. Fry until puffed and golden.

Serve Pakora with LISA’S Feta & Basil as a dipping sauce on the side


  • 1 onion
  • 1 potato
  • 1 kumara
  • 1 ½ c chickpea flour
  • 1 tsp baking soda
  • &frav14; c fresh coriander, chopped
  • 1 tsp ground cumin
  • ½ tsp cayenne pepper
  • 2 tsp salt
  • 1 tsp curry powder
  • ½ c cold water
  • vegetable oil, to deep fry
