Feta and Spinach Soufflé Omelette


Featuring: Lisa’s Feta & Baby Spinach dip
Serves: 1 person
Prep time: 5 minutes
Cooking time: 5 minutes


  • 3 eggs
  • ¼ tub of Lisa’s Feta & Baby Spinach dip
  • 1 tsp of butter
  • 1 tsp olive oil
  • 2 Tbl of grated cheddar cheese
  • 2 tsp of shaved parmesan cheese
  • salt & ground black pepper to taste
  • Herbs


  1. Split the yolks and egg whites into different bowls
  2. In a large bowl whisk together 1 tablespoon of the dip and the 3 yolks
  3. In another large cold dry bowl, whisk egg white’s till firm and fluffy
  4. Gently fold ½ of the egg whites into the yolk mix until incorporated and then repeat with the rest
  5. In a non-stick omelette pan melt butter and oil on medium to high heat
  6. Add the omelette mix and allow to seal on the bottom
  7. Sprinkle the 2 cheeses on top and fold over the other half
  8. If you like your omelette cooked well then finish using the grill function on your oven
  9. Top with Feta & Spinach dip to serve
