Courgette, Lemon and Basil Fritters

Serves: 4 people

  • 5 large zucchinis (grated)
  • 1½ tsp salt
  • 2 eggs (whisked)
  • ¾ cup flour
  • ¼ cup of milk
  • 2 Tbl finely chopped basil
  • 2 tsp of lemon zest
  • 2 Tbl of grated mild cheese
  • 2 Tbl of grated parmesan
  • salt & cracked black pepper
  • olive oil in a spray can
  • 1 tub of Lisa’s Grilled Capsicum Hummus
  • herbs


  1. Pre heat an oven at 220ᵒC. Place a muffin tray or similar tray in the oven. Coat with a little canola oil from a spray can
  2. Mix the grated zucchini with salt and leave to sit covered for 20 minutes.
  3. Rinse zucchini in a colander under cold water. Squeeze out as much excess moisture as possible
  4. In a bowl make a batter by whisking the eggs, milk and flour together to form a smooth batter.
  5. Fold in zucchini, basil, lemon zest, cheeses and seasoning
  6. Drop 2 tablespoons of mix per fritter into each mould, If there is any left top up each mould
  7. Cook for 20 minutes until the sides are crisp and coloured
  8. Top each fritter with grilled capsicum hummus and herbs
