Agria Baked Potato with Rocket and Lemon dressing


Featuring: Lisa’s Feta & Basil dip
Serves: 4 people

Cooking time: 50 minutes


  • 3 large Agria potatoes
  • 1 tub Lisa’s Feta & Basil dip
  • ½ grated cheddar cheese
  • 100g rocket
  • juice squeezed from ½ a Lemon
  • 2 Tbl olive oil
  • salt & cracked black pepper


  1. Wash & scrub 3 Agria potatoes
  2. Using a small knife cut a ring around each potato lengthways about 3mm deep
  3. Bake in a preheated oven on 200ᵒC until crispy on the outside & soft in the middle
  4. Cut each potato in half following the cut line & scoop out as much potato flesh as possible
  5. Using a fork or potato masher, mash the Feta & Basil dip and potato together, season
  6. Fill potato halves with the potato mix and top with grated cheese. Grill until cheese is golden and crispy
  7. In a bowl toss rocket with lemon juice and olive oil
  8. Serve rocket beside or on top of your potato
