Vegetable Pakora with Tzatziki
LISA'S Tzatziki Dip provides a cooling compliment to these spicy little fritters.
Method
Chop vegetables into 1 cm pieces. Combine chickpea flour with baking soda, coriander and remaining dry ingredients. Stir in cold water and mix to make a smooth batter. Stir in chopped vegetables. Heat enough oil in a deep saucepan for deep-frying, and drop small spoonfuls of the mixture into the hot oil. Fry until puffed and golden.
Serve Pakora with LISA'S Tzatziki as a dipping sauce on the side

1 onion
1 potato
1 kumara
1 ½ c chickpea flour
1 tsp baking soda
&frav14; c fresh coriander, chopped
1 tsp ground cumin
½ tsp cayenne pepper
2 tsp salt
1 tsp curry powder
½ c cold water
vegetable oil, to deep fry
