Chickpea Tabbouli with Garlic Hummus Dressing
The addition of chickpeas in this Tabbouli provides a tasty variation to the traditional recipe.
Method
Place burghul in a bowl and cover with boiling water. Stand for 15 minutes and drain. Add parsley, chickpeas, tomatoes and spring onions. Combine dressing ingredients and pour over salad. Toss well before serving.
Ingredients
¾ c burghul (cracked wheat)
2 c fresh parsley, chopped
300g can chickpeas, drained and rinsed
250g punnet cherry tomatoes, halved
3 spring onions, chopped
Dressing
½ c olive oil
¼ c lemon juice
