Fresh Broad Bean and Jalapeno Falafels
Making felafels with broad beans and Lisa's Jalapeno Hummus really adds a new dimension to felafels. They are just wonderful. Enjoy for a lunch or nibble when entertaining.
Method
In a food processor put the LISA'S Jalapeno Hummus, blanched broad beans, onion, breadcrumbs, garlic, parsley, coriander, cumin and ground coriander. Add a good seasoning of salt and pepper. Pulse until the mixture is finely minced and well combined. Mould tablespoonfuls into small patties and refrigerate for an hour. Pan fry in oil and serve with LISA'S Yoghurt Dip.
Ingredients
200 gram tub LISA'S Jalapeno Hummus
500 gram bag frozen broad beans, blanched and peeled
1 onion, peeled and finely minced
1 cup fresh breadcrumbs or ½ cup dry breadcrumbs
2 tsp minced fresh garlic
2 tbsp finely chopped fresh parsley
2 tbsp finely chopped fresh coriander
1 tsp ground cumin
1 tsp ground coriander
salt and pepper to season
oil for panfrying
